Orange Garlic Chicken Stir Fry

Orange Garlic Chicken
Forget calling for takeout or delivery when it is nearly as easy (not to mention less expensive and healthier too) to make your own. Using just 5 common ingredients that are probably already in your pantry and fridge you can serve a delicious homemade healthy chicken stir fry recipe. This dish is easy to adjust to serve more or less people, or to go lighter or heavier with flavoring. Sesame oil will give you a slightly more authentic Asian taste but you can use vegetable or canola oil to fry in as well. Chicken stir fry is a quick, healthy meal that will make everyone happy and requires minimal fuss on your part.
Ingredients:
1 bag frozen stir fry peppers and onions
3 boneless, skinless chicken breasts
1/4 cup soy sauce
1/2 cup fresh orange juice
3 cloves fresh garlic
salt and pepper to taste
oil for pan
Directions:
Partially frozen chicken breasts are the easiest to cut- season chicken with salt and pepper then slice into 1/4″ strips.
Drizzle oil in pan- enough to moisten bottom of pan, and heat pan to medium high heat.
Sautee chicken strips until mostly cooked throughout.
Add vegetables and garlic, cook until vegetables are tender-about 5-7 minutes.
Stir in orange juice and soy sauce, turning to coat, cook and additional 2 minutes.
Serve over rice.
