Meal Planning: Food In My Stockpile 9/4

My day on Wednesday did not allow me to get my meal planning accomplished for the week.  And I have time today so inspite of the fact that the deals are better on Wednesday (where I live anyway) I will be doing my shopping today.

So first I take a look around my kitchen.  Here are the items I have that I can use this week:

Frozen Spinach
Container of soup mix from Harry & David
Turkey Sausage
Eggs
3 bags mixed frozen veggies
Mexican Shredded Cheese
Frozen Broccoli
Frozen Chicken
Pork Tenderloin
Bag of Baby Carrots
Orange Juice
Brown Rice
Green Beans
Cream of Mushroom Soup

Here are the meals I plan on making:

Breakfast Meals: Sausage, Egg & Cheese English Muffins (I will freeze these and defrost each morning)

Meal #1: Pork Tenderloin, Green Bean Casserole

Meal #2: Spinach Stuffed Chicken and mixed veggies. (I am going to sort of jerry-rig a recipe because I don’t want to use cheese. I have bread crumbs so I should be able to figure something out).

Meal #3: Soup. I know it’s hot out but this soup mix looks amazing. It’s got veggies in it (plus I think I will add some of the carrots) and the only ingredient I don’t already have in the house is chicken broth.

Meal #4: Salads.  It’s starting to get cool outside so I want to use all my veggies, dressings and salad items before I REALLY start craving soups and chili. 

Those will be my meals this week.  From that I created my shopping list:

French Onions (for green bean casserole)
English Muffins
Chicken Broth
All the fruits and veggies I want

Since I am going to be buying alot of fruits and vegetables this week I am heading to Harris Teeter where I have found the quality is a little bit better in my neck of the woods. Even though my trip doesn’t include coupons this week, by taking a few minutes to plan ahead I was able to best utilize the items in my house!
