I’ll have to admit – I had a system going. I’d spend Sundays putting together a grocery list of items to buy for the week and have everything planned out for weeknight dinners. However, all the meals I’d plan required defrosting, pots, pans, dishes, and various other cooking utensils. I wasn’t saving a whole lot of time – mostly making more work for myself as the dishes piled up in the sink at 7 o’clock on a Monday night.

So, I started buying a few pre-made sides and dishes and would add them to the mix during the week, including a few ingredients here and there to make them my own. Here are a few of my favorites:

Santa Fe Rice & Beans (just add Chicken)

Here’s an easy addition to your “Taco night.”  I sliced up 1 lb. of chicken breast the night before and marinated in taco seasoning in a Ziploc bag in the fridge. When I got home from work, I just heated up the beans and rice in the microwave and sauteed the chicken on a pan. Heat up tortillas and add some sliced avocado, lime juice and cilantro, or put the ingredients on top of a salad and add a little ranch dressing and taco sauce. Either way, this makes the perfect Mexican fiesta with one pan and easy clean up.

Linguini Carbonara

I was excited to see this in the store because all I needed to do was add a few extra ingredients and make one of my favorite Italian dishes! This traditional linguini pasta dish is tossed in a creamy sauce made with bacon, real half & half, peas and parmesan and Romano cheeses.  Add some wild mushrooms and caramelized onions (even a little chopped Proscuitto ham) and you’ll have a delicious meal ready in under 20 minutes. Top with a sprinkle of fresh Parmesan and dash of cracked pepper.
