How To Make Carrots In The Instant Pot®

Pressure Cookers have come back into vogue! They make life so much easier. I have only had mine about six months now and I am a big fan.
When I first got it I was freaked out to try just about everything. I have the Instant Pot IP-DUO60 7-in-1 Multi-Functional Pressure Cooker and sometimes it seems like half computer and half crock pot.
One of my favorite side dishes are carrots. And they are CRAZY easy to make in the Instant Pot®. These Instant Pot Steamed Baby Carrots are so simple to make and very yummy. I prefer my pressure cooker carrots with honey but I’m also a big fan of the maple syrup!
How To Make Carrots In The Instant Pot®
Ingredients:
1 cup of water
2 lbs Carrots (I use a two pound bag of baby carrots from the store but you could buy whole carrots and cut them up thickly)
1/4 cup raisins (or just one of those small 1 oz. boxes)
Optional: honey, maple syrup, butter- whatever you would like to use

Directions:
Open the Instant Pot® and make sure it is clean.
Put one cup of water in the inner pot (that’s the silver pot you can remove and wash)
Add the carrots and raisins
Close the lid and make sure the vent valve is closed

Press “Manual” on low pressure for four minutes.
As soon as the timer goes off release the valve on the top and let the steam come out. This is called a “quick release.”

Pour the carrots and raisins in a strainer.
While the pot is still warm I put about a tablespoon of honey or maple syrup (or both) in the bottom and allow it to heat up a bit. You could also do some butter if you like. Basically just put in whatever you would like to sweeten the carrots.
Dump the carrots back in and use the big white spoon that came with the Instant Pot® to mix it together and serve!
