Easy No-Bake Fruit and Nut Clusters

A perfect pick me up substitute for cookies, these Fruit and Nut Clusters are a delicious alternative to less healthy snacks.  Customize them to your liking by changing up the fruit and nuts- my favorite combo is walnuts and dark chocolate chips or white chocolate chips with chopped dried strawberries.  Sub in a different nut butter for peanut butter if you prefer. 

These are great for an on the go snack or an occasional quick breakfast. The kids love them , I leave out the nuts for theirs, and I feel less guilty about giving them these than a chocolate chip cookie.   Flaxseed provides you with a healthy does of Omega 3’s and fiber, while the oatmeal adds fiber and iron.  If you use local,  raw, unprocessed honey you can add the benefit of building your immunity to local pollens.

Protein Bites Ingredients [3]

Ingredients:

¾ cup any combination of nuts, chocolate chips and dried fruit

½ cup Peanut Butter

½ cup unsweetened flake Coconut

1 cup quick cook oats

¼ cup Honey

1-2 Tbsp. ground Flaxseed

Directions 

Combine all ingredients in a medium bowl until thoroughly mixed.

Cover, and place in refrigerator for an hour up to the next day.

Remove from refrigerator and roll into balls of about 1” diameter.

Keep refrigerated in an airtight container.

Makes about 2 dozen.
