Healthy Beef Stir Fry
- 1 lb. beef strips, lean cut
- 1 head of broccoli or add as many veggies and you like!
- 2 Tbsp. low sodium soy sauce
- 2 Tbsp. cornstarch
- 1 cup low sodium beef broth
- Canola or Vegetable Oil to coat pan
- Whisk beef broth, soy sauce, and cornstarch together in a small bowl.
- Wash broccoli and chop into small florets.
- Drizzle just enough oil to coat pan.
- Heat oil over high heat.
- Add broccoli and sauté for 2-3 minutes.
- Stir in beef and soy sauce mixture.
- Continue to cook for an additional 7- 8 minutes until beef is thoroughly cooked, broccoli softened, and most liquid has been absorbed.
- Serve over rice or noodles.
