Cooking For One: Make-Ahead Garlic Lime Chicken

Ingredients
  • 3 boneless, skinless. chicken breast halves
  • ½ cup low sodium soy sauce
  • ¼ cup fresh lime juice
  • 1 Tbsp. Worcestershire sauce
  • 2 cloves garlic, minced
  • ½ tsp dry mustard

  1. Combine these ingredients and place in a bag in the refrigerator overnight.

  3. Sprinkle the marinated chicken with ½ tsp coarsely ground pepper and discard the bags. You can either grill or cook on a pan on the stove.
  4. To cook on the stove, use non-stick on a medium-sized frypan. Cook chicken over medium heat - about 6 minutes on each side or until fork can be inserted in chicken with ease and it is no longer pink.
