Cooking For One Recipes: Stuffed Bell Peppers

Ingredients
  • ¼ cup sliced green onions
  • ¼ cup shallots
  • ⅓ cup (3 ounces) ⅓-less fat cream cheese
  • 1 tablespoon lime juice
  • 2 tablespoons fresh cilantro
  • 2 tablespoons light sour cream
  • 8 mini bell peppers (or one to two peppers, quartered)
Instructions
  1. ) Combine green onions, shallots, cream cheese, lime juice, cilantro and sour cream. Halve the bell peppers (or quarter them if you bought larger ones) and discard seeds.
  2. ) Divide cheese mixture evenly among the pepper slices.
  3. ) Place peppers on grill rack coated with cooking spray over medium-high heat.
  4. ) Grill 7 minutes or until peppers are lightly charred.
