Crock Pot Thursdays: Chicken To Use For Any Meal


I love this meal because it’s just for chicken.  Chicken you could use later in sandwiches, make chicken salad, or just eat cold when you are too lazy to make something!  One of the reasons this is such a frugal recipe is because you are buying a WHOLE chicken which is much cheaper per pound than most other chicken.

*I usually purchase an 8lb whole chicken
*Remove most of the skin
*Place in Crock Pot and rub sides with spice mixture (recipe below)
*Cook on low for about 8hrs or high for 4hrs, until meat falls from bone. 
*Once cooled, pull all chicken from bones and freeze or store for later meals.

Spice Rub:
1/2 tsp. each: black pepper, garlic powder
1 tsp. each: dried thyme, onion powder, and chili powder (or cayenne)
2 tsp paprika
4 tsp salt

I love having ready to go chicken around the house but usually mine come from the grocery store in the already cooked section.  This would be cheaper!
