Welcome to Cooking For One Recipes [1]! This series is designed for those of us who don’t need recipes for big meals- just enough for one person to eat without a ton of leftovers. Or, if you are feeding a large family, you can certainly alter the recipes to whatever amount of people you need!

This is one of my favorite easy recipes- Sauteed Broccoli with Red Pepper Flakes. It has very few ingredients and the Red Pepper gives it just a little bit of kick without being spicy (I don’t do spicy).
Ingredients
Olive Oil
2 good sized heads of broccoli (or one bag of broccoli from the produce section)
2 cloves garlic (or jar minced garlic from produce section)
Red Pepper Flakes
Salt
½ cup water
Optional ingredients- lemon juice or parmesan cheese
Be sure broccoli is DRY before you begin cooking- if it is wet the food will steam before it browns.
Directions
Step One: Set the skillet on the stove over medium high heat. Add Olive Oil until it’s smoking. Cut the broccoli into bite sized pieces.
Step Two: Add the broccoli, garlic, red pepper flakes and salt and let cook. Stir occasionally until the broccoli is a bit brown in parts.
Step Three: Add the water and let it simmer, stirring every once in a while, unti the broccoli is tender and the water has cooked away. This only took a few minutes when I did so I wouldn’t walk away for too long.
Step Four: Grab a piece while cooking and you will know when it’s finished.
And that’s it- only a few ingredients and about 15 minutes to be finished.
If you like bigger meals you can use this as a side dish but some nights I just feel like a big bowl of veggies!
