Cooking For One: Make-Ahead Garlic Lime Chicken

Welcome to Cooking For One Recipes [2]!  This series is designed for those of us who don’t need recipes for big meals- just enough for one person to eat without a ton of leftovers.  Or, if you are feeding a large family, you can certainly alter the recipes to whatever amount of people you need!

March Madness is over, but the fun is just beginning!  The first quarter of 2013 is over, Spring is here, and it’s time to open up some windows and fire up the grill.

But you still have to work! So, for those long days at the office – cheers to this easy, easy recipe that is still oh so good! Grab a pack of chicken (or your Zaycon chicken breasts [4] that you just picked up) and try Garlic-Lime Chicken.  While the crockpot was a great companion over the winter, I think make-ahead meals are perfect for Spring and summer. Prep the night before, marinate, and the next evening, you’re all ready to go. And the best part? No mess  – your prep work is already done.

We served it up with some fresh veggies for a winning entrée.

GarlicLimeChicken_Ingred [5]

Ingredients:

3 boneless, skinless. chicken breast halves
1/2 cup low sodium soy sauce
1/4 cup fresh lime juice
1 Tbsp. Worcestershire sauce
2 cloves garlic, minced
1/2 tsp dry mustard

Directions:

Combine these ingredients and place in a bag in the refrigerator overnight.

When you get home from work…

Sprinkle the marinated chicken with 1/2 tsp coarsely ground pepper and discard the bags. You can either grill or cook on a pan on the stove.

To cook on the stove, use non-stick on a medium-sized frypan. Cook chicken over medium heat – about 6 minutes on each side or until fork can be inserted in chicken with ease and it is no longer pink.
