Cooking for One: Grandma’s Cucumber and Onion Salad

Welcome to Cooking For One Recipes [2]!  This series is designed for those of us who don’t need recipes for big meals- just enough for one person to eat without a ton of leftovers.  Or, if you are feeding a large family, you can certainly alter the recipes to whatever amount of people you need!

Cucumber and Onion Salad is one of my favorite dishes of the summer. It can be made in under 10 minutes and is pretty hard to screw up. The recipe below is for 1-2 people but it is super easy to adjust the recipe. This would be a great salad to take to a summer BBQ!

 

ingredients [4]

Cucumber and Onion Salad:

1 cucumber sliced

1/4 onion sliced

1/4 cup sugar

dash of celery seed

1/2 cup apple cider vinegar

1 cup water

Directions:

1. In a sauce pan bring sugar and vinegar to a boil. Stir while boiling until all sugar is dissolved. Let cool.

2. In a large mixing bowl, add cucumbers, onions, water, celery seed and vinegar mixture. Stir and refrigerate for at least one hour before serving.

The longer it sits the better so I try to make it the day before I want to serve it.
