Welcome to Cooking For One Recipes [2]! This series is designed for those of us who don’t need recipes for big meals- just enough for one person to eat without a ton of leftovers. Or, if you are feeding a large family, you can certainly alter the recipes to whatever amount of people you need!

Grilled cheese sandwiches are a quick and easy lunch or dinner. Over the years I have learned that using good bread is very important in the outcome. I have also learned not to be afraid to throw some extra ingredients like ham or onions in with the cheese and experiment.
Recently I tried a Caramelized Onion and Roast Beef Grilled Cheese Sandwich and never want a plain grilled cheese again. You won’t want to eat just one it is that delicious!
Ingredients:
4 slices sourdough bread
1/2 red onion sliced
8 slices Colby cheese
1/4 lb. Roast Beef
about 3 tablespoons butter
Directions:
1. Place 1 to 2 tablespoons of butter in a pan over medium heat and let melt. Once butter is melted add onions and let cook until soft probably about 5-8 minutes. (I cooked mine for all most 8 minutes because we like them more done.)
2. While onions are cooking, butter one side of bread and place 2 slices of bread butter side down on a square frying pan. Place 2 pieces of cheese on each slice of bread. Divide the roast beef evenly between the 2 sandwiches.
3. Once the onions are finished spread onions evenly over both sandwiches. Place 2 more slices of cheese over onions. Top sandwiches with remaining bread and let cook on medium heat until golden brown.
4. Remove sandwich from heat and enjoy!
