Taking Back My Morning With Seattle’s Best #TakeBackYourMorning

When it comes to mornings, I am selfish. I have always enjoyed “me” time in the morning to leisurely get ready, eat breakfast, and watch the morning news. Mornings were mine and my hubby knew not to throw it off by making pancakes and eggs or asking me to do something that wasn’t planned.

Fast forward 5 years to present day with two kiddos and mornings are no longer mine whether I am working or not. I try hard to not be a fuss bucket because of all that has to get done in the mornings to get the kids to school/ day care and for me to get to work on time. Just thinking about it stresses me out.

Recently I heard about a challenge from Seattle’s Best Coffee to take back my morning.

After giving it much thought, I figured out that giving myself an extra thirty minutes to get control of my mornings may be beneficial for everyone in the family. I started by going to Wal Mart to buy Seattle’s Best Coffee. You can see my adventures here. Each morning I would get up thirty minutes early whether I had to go to work or not. For a week now, I have been getting up an extra thirty minutes in order to have “me” time to include a cup of Seattle’s Best and a cinnamon raisin english muffin.

I thoroughly enjoyed my week and plan to continue. As the summer approaches when I do not enjoy hot coffee any longer, I will switch over to iced coffee or cappuccino and use this recipe found here.

Healthy Eating Even With A Busy Schedule #HealthyChoices

Fridays are especially busy for our family because the kiddos are taking swim lessons at the Rec Center in Va Beach. They love it and are learning how to be fish in the water. Swim lessons start at 6, so by the time we get home from work and change clothes there is not much time for dinner.

I was at Wal Mart the other day grabbing some groceries for a cooking class I was teaching to high school students and I saw Healthy Choice meals in the freezer section. I have always been a fan of Healthy Choice and occasionally take the meals to work with me for lunch. With only 300 calories you would be surprised at how good these taste.  I bought 3  of their Top Chef dinners knowing they would be healthy and quick for dinner that night. I also purchased 1 box of Healthy Choice dark chocolate swirl frozen greek yogurt for dessert.  The greek yogurt comes in a pack of 3 and each cup is only 100 calories. I had a coupon for each which meant dinner for the night was going to be a bargain!

The Healthy Choice dinners were a huge hit with the family and I did not feel guilty for giving them to my family.  They were just what I needed to provide my kiddos with a healthy meal and get us out of the door on time.

After returning home from lessons I allowed the kiddos to have one of the dark chocolate swirl yogurt cups. They disappeared before I could get a picture so I would say they were a big success.

As our kiddos get older, our schedules seem to be getting busier but that does not mean I want to start substituting healthy meals with fast food. Here are a few tips that I find helpful to maintain healthy eating habits while living a busy life.

  • Meal Plan! Every week sit down and plan out your breakfasts, lunches, and dinners. Include snacks too if your kids still need them during the day.
  • Purchase produce on sale.
  • Buy frozen veggies to save money.
  • Check for coupons. Most coupons are for staple items and processed food but you can find coupons for healthy foods like this!  You can check out these coupons for  Healthy Choice Greek Frozen Yogurt and Healthy Choice Cafe Steamers!  
  • Read your labels!
  • Pre-chop and pre-bag your veggies and fruit so that when you are running out the door you just reach in the fridge and grab a bag of carrots or slices of apple.

My kiddos just had birthdays and at their well checks the doctor was telling me that healthy eating habits start now. So take the time to plan healthy meals for your family to ensure that  a good example is being set for living a healthy lifestyle even when we are in a busy season of life.

Where’s The Fish? #FishnVeggies

Every week I try to incorporate a new recipe into our menu. While I was grocery shopping at Wal-Mart I checked out Mrs. Paul’s Fish Tenders in the freezer section because I had a coupon for $1/1 Mrs. Pauls and wondered if my family would eat them or not. I figured it couldn’t be too bad with the right recipe.

The next day I told my kiddos we were having a surprise for dinner. I did not want to hear “yuck” or “gross” without them trying it.

All day my son kept bugging me about the  dinner surprise so  I finally told him that we were having fish. Other than tuna fish sandwiches we very rarely eat fish because cooking it intimidates me. While the kiddos were taking a nap I prepped the casserole, which thanks to a microwave, frozen veggies and pre-made fish tenders made it quick and easy, so that when hubby got home we could put it in the oven and spend family time together.

The house filled with a wonderful aroma.  As we began to eat, my son looks over to me and asked “Mommy, where’s the fish?”

That is when I knew I had a keeper! After dinner, I put the recipe in my binder so that I could make it again.

To make this super duper easy fish tender casserole you will need the following ingredients:

Fishe Tender Casserole

 Ingredients

1 box Mrs. Paul’s Fish Tenders
1 bag BirdsEye Steamfresh Broccoli Florets
1-1/2 cups cooked rice
1 cup whole milk or half and half
1-1/2 cup shredded cheddar cheese
1 Tablespoon Garlic or garlic powder
1/2 tspn black pepper
1/4 tspn salt
1 tspn oregano

Cooking Instructions

1. Preheat oven to 350 degrees.

2. Cook the broccoli and rice as directed on bags.

3. Mix together the cooked rice, milk, 1/2 cup cheese, and all of the spices until well combined. Fold in cooked broccoli.

4. Transfer everything into a 9 inch baking pan. Top with frozen fish tenders and remaining 1 cup of cheese.

5. Bake for 30 minutes. Serve immediately.

Amazon & Walmart Watch Each Other


Last year during the holidays I noticed something VERY interesting (atleast to me).

If Walmart  lowered a price on an item, you could be sure in 20 minutes Amazon had also lowered it. 

This morning another blogger reported a deal on a cute toy at Walmart.com.  Their site appears to be wonky right now  so I went over to Amazon.  The deal was a pretty significant discount off the regular price and sure enough, the toy is the exact same sale price at Amazon.

So if you like Amazon better than Walmart or just don’t want to deal with going to the store to pick up items at Walmart (their ship to store is free), always check Amazon.com. 

Odds are you can get the same item at almost the exact price.
