Strawberry Rhubarb Cobbler Recipe

Serve this Strawberry Rhubarb Cobbler recipe as is or topped with a generous helping of vanilla ice cream for a delicious taste of summer.  Sweet and tart with a golden brown topping this recipe is perfect for summer picnics, BBQ’s, potlucks, or any other gathering.  (If you are going to travel with it consider this Portable Travel Casserole Tote [2] to help with transport- I LOVE mine.)  So simple to pull  together it’s hard to believe it’s homemade. You can very easily reduce the amount of sugar called for if you prefer a less sweet version- 1/2 cup in the filling and reduce to 1 Tbsp. in the topping.  Fresh or frozen strawberries or rhubarb will work if you aren’t able to find any in season.

Ingredients:

Filling:
4 cups rhubarb, chopped
2 cups strawberries sliced
1 cup granulated sugar
2 Tbsp. cornstarch
1/8 tsp. salt

Topping:
1 cup all-purpose flour
1 Tbsp. granulated sugar
1 Tbsp. brown sugar
1/2 stick (4 Tbsp. cold butter)
1/8 tsp. salt
1 egg
1/4 cup milk

Directions:
Preheat oven to 400 degrees

Grease an 8×12 pan with butter.

Combine sugar, rhubarb, strawberries, and salt in a large saucepan.

Stir well and let sit for 10 minutes.

Turn heat onto medium high and boil for 1-2 minutes.

Pour filling into prepared pan.

In a small bowl combine flour, sugars, and salt.

You can finely dice very cold butter into flour mixture, I prefer to pop it in the freezer for 15-20 minutes and grate it [6] into flour mixture, the fine pieces are distributed easier.

Blend with your hand until mixture looks like crumbs.

Make a well (indent) in the center and pour in milk and eggs, stir until just combined.

Drop batter by Tablespoons all over top of fruit mixture, don’t worry about  covering every piece of fruit- it will rise and cover the majority.

Sprinkle with a little more brown or granulated sugar

Bake for 20-25 minutes until topping is golden brown.

Remove from oven and allow to cool for 10-15 minutes before serving.
