This Healthy Beef Stir Fry makes for a quick meal, perfect for the end to a busy work day. This recipe is better than take out with far fewer unpronounceable additives, preservative, and who knows what else. Just 5 ingredients work together to create a dish that is light in fat but heavy in flavor.
To keep it healthy use lean cuts of beef-top or bottom round, sirloin, tenderloin, etc. Using a nonstick pan will mean you use less oil, cutting back on even more fat. Serve over brown rice for an even healthier dinner with added fiber.
Ingredients
1 lb. beef strips, lean cut
1 head of broccoli or add as many veggies and you like!
2 Tbsp. low sodium soy sauce
2 Tbsp. cornstarch
1 cup low sodium beef broth
canola or vegetable oil to coat pan
Directions:
Whisk beef broth, soy sauce, and cornstarch together in a small bowl.
Wash broccoli and chop into small florets.
Drizzle just enough oil to coat pan.
Heat oil over high heat.
Add broccoli and sauté for 2-3 minutes.
Stir in beef and soy sauce mixture.
Continue to cook for an additional 7- 8 minutes until beef is thoroughly cooked, broccoli softened, and most liquid has been absorbed.
Serve over rice or noodles.
