Strawberry Rhubarb Cobbler Recipe

Ingredients
  • 4 cups rhubarb, chopped
  • 2 cups strawberries sliced
  • 1 cup granulated sugar
  • 2 Tbsp. cornstarch
  • ⅛ tsp. salt
  • Topping:
  • 1 cup all-purpose flour
  • 1 Tbsp. granulated sugar
  • 1 Tbsp. brown sugar
  • ½ stick (4 Tbsp. cold butter)
  • ⅛ tsp. salt
  • 1 egg
  • ¼ cup milk
Instructions
  1. Combine sugar,rhubarb, strawberries, and salt in a large saucepan, stir well, and let sit for 10 minutes.
  2. Turn heat onto medium high and boil for 1-2 minutes.
  3. Pour filling into prepared pan.
  4. In a small bowl combine flour, sugars, and salt.
  5. You can finely dice very cold butter into flour mixture, I prefer to pop it in the freezer for 15-20 minutes and grate it into flour mixture, the fine pieces are distributed easier.
  6. Blend with your hand until mixture looks like crumbs.
  7. Make a well (indent) in the center and pour in milk and eggs, stir until just combined.
  8. Drop batter by Tablespoons all over top of fruit mixture, don't worry about covering every piece of fruit- it will rise and cover the majority.
  9. Bake for 20-25 minutes until topping is golden brown.
  10. Remove from oven and allow to cool for 10-15 minutes before serving.
