Cooking For One Recipes: Sirloin and Bok Choy (A Valentine's Meal)

Ingredients
  • ⅛ cup unsalted butter
  • 5 teaspoons minced garlic (or to taste)
  • 12 -14 baby bok choy (washed thoroughly) – I grabbed this Bok Choy at Whole Foods (Virginia Beach)
  • 1½ cups canned low sodium chicken broth
  • 1 lb sirloin filet (or filet mignon)
  • Salt and pepper
Instructions
  1. Frugal Chick Prep – Bok Choy
  2. Melt butter in heavy large skillet over moderate heat.
  3. Add minced garlic and saute about 2-3 minutes until barely golden/brown.
  4. Add bok choy and chicken broth and simmer until bok choy is tender, turning occasionally, about 8 minutes.
  5. Season with salt and pepper.
  6. Use a slotted spoon to serve.

  8. No fancy recipe here. My recommendation for Sirloin filet is to marinate 2-3 hours minimum before cooking. Some of my favorite spices include Penzey’s Chicago Steak Seasoning and my favorite marinade is Allegro Meat Tenderizer and Marinade (which can be found at Harris Teeter). If spices aren’t your thing, a little unsalted butter with salt and pepper always does the trick!
  9. Marinate steak desired time
  10. Grill steak to desired internal temperature
  11. Thinly slice steak and serve over baby bok choy
