Cooking For One: Rosemary Pork Tenderloin


Welcome to Cooking For One Recipes!  This series is designed for those of us who don’t need recipes for big meals- just enough for one person to eat without a ton of leftovers.  Or, if you are feeding a large family, you can certainly alter the recipes to whatever amount of people you need!

This is a super easy meat that will impress anyone. I like to serve it with mashed potatoes and roasted asparagus.

Ingredients:

1 small pork tenderloin

1 sprig of fresh rosemary

1/2 cup apricot preserves

1/2 cup spicy brown mustard

salt and pepper

Directions:

1. In a small bowl mix the apricot preserves with the spicy brown mustard.

2. Place pork tenderloin in baking dish and cover with salt and pepper all over. Then sprinkle with rosemary.

3. Pour mixture over top of pork and bake covered on 350 degrees for 20 minutes.Uncover pork and baste and cook for another 15-20 minutes. Ovens and sizes of tenderloins vary so just make sure it cooks until no pink inside.
