Cooking For One Recipes: Stuffed Bell Peppers

Welcome to Cooking For One Recipes [2]!  This series is designed for those of us who don’t need recipes for big meals- just enough for one person to eat without a ton of leftovers.  Or, if you are feeding a large family, you can certainly alter the recipes to whatever amount of people you need!

Are you ever in the mood for something a little out of the ordinary? Maybe something you can serve as an appetizer at a cocktail party that has a “Wow!” factor? I’m not going to suggest the typical pigs in a blanket or meatballs (let’s face it, we’ve all reverted to these in times of emergency appetizer crisis)…this, instead, is a one-of-a-kind recipe you can use again and again.

So try this perfect party snack for friends, or try it for you – just as a fun appetizer to keep you from starving after a long day at work.

stuffed peppers ingredients [4]

Ingredients:

¼ cup sliced green onions
¼ cup shallots
1/3 cup (3 ounces) 1/3-less fat cream cheese
1 tablespoon lime juice
2 tablespoons fresh cilantro
2 tablespoons light sour cream
8 mini bell peppers (or one to two peppers, quartered)

Directions:

1)      Combine green onions, shallots, cream cheese, lime juice, cilantro and sour cream. Halve the bell peppers (or quarter them if you bought larger ones) and discard seeds.

2)      Divide cheese mixture evenly among the pepper slices.

3)      Place peppers on grill rack coated with cooking spray over medium-high heat.

4)      Grill 7 minutes or until peppers are lightly charred.

This will have your guests coming back for more – so be sure to double the recipe if entertaining!
