Cooking For One Recipes: Mild Jerk Chicken

Welcome to Cooking For One Recipes [2]!  This series is designed for those of us who don’t need recipes for big meals- just enough for one person to eat without a ton of leftovers.  Or, if you are feeding a large family, you can certainly alter the recipes to whatever amount of people you need!

Looking for a spin on your everyday chicken? I know I am.  I don’t know how many times I buy fresh chicken at the store and wonder – what should I do with this tonight?  BBQ? Spicy? Grilled? Maybe you just give up like me and throw it in the crock pot with some random spices and hope for the best.

Well, let’s throw your typical recipes out the window. This is no ordinary dinner – so get ready.

jerk chicken ingredients [4]

Ingredients:

¼ cup sliced green onions
¼ cup shallots (can substitute minced onions here)
1 TBSP brown sugar
2 TBSP fresh lime juice (you can buy a lime and squeeze for juice!)
2 TBSP olive oil
½ teaspoon all spice (can substitute a Caribbean jerk or other similar spice here)
4 garlic cloves, minced
1 TBSP chili sauce
2-3 chicken breasts

Preparation:

1)      Preheat the stove top to medium-high heat. After pre-heating, reduce one side to low.

2)      Combine ¼ cup green onions, ¼ cup shallots, sugar, 2 tablespoons juice, oil, allspice, garlic, and chili sauce in a mini food processor. Process until smooth.

3)      Combine chicken in a medium bowl or Ziploc bag. Toss well.

4)      Coat skillet with cooking spray and cook chicken over medium-high heat. Cover for 5 minutes on each side and move to low heat to cook for 5 additional minutes on each side until done.

This is also a great recipe to make with the stuffed mini bell peppers in a previous post! If you like veggies, you can also choose to serve with Brussel Sprouts. I just washed these, chopped in half, tossed with EVOO, salt & pepper, then baked at 350 degrees in the toaster oven for about 10 minutes. (You can also add bacon pieces to brussel sprouts if you choose)!
