Cooking For One Recipes: Easy Lasagna Ravioli Recipe

Welcome to Cooking For One Recipes [2]!  This series is designed for those of us who don’t need recipes for big meals- just enough for one person to eat without a ton of leftovers.  Or, if you are feeding a large family, you can certainly alter the recipes to whatever amount of people you need!

I love this recipe because it has no leftover ingredients   Everything I buy from the grocery store gets used.  It does give me some leftover food though- usually enough for lunch the next day!

One of the few meals I know how to make well is lasagna but it is so complicated and expensive.  By the time I buy the different cheeses and put the layers in the pan I am ready to just boil some noodles and make spagetti!

So I figured, why not try ravioli and skip the cheese and noodle part!  Turns out it works perfectly.

Ingredients:

24 oz jar marinara sauce (I used Ragu for this but next time might try something thicker)
24 oz bag of frozen ravioli
8 oz bag Mozzerella Cheese
1 lb ground beef (I was at a friend’s house so I had to use store meat instead of the good stuff from Zaycon Foods [5])

Directions:

Preheat oven to 400 degrees.

Brown the ground beef on your stove top.  If you get the stuff with the fat in it use a collander to drain and then rinse out the grease.  Set the meat aside in a bowl.

Spread enough marinara sauce over the bottom of an 8 X 8 baking dish to cover it.  This will act to keep everything from sticking to the bottom.

Ravioli Lasagna 7 [6]

Add about 1/3 of the bag of ravioli, followed by 1/3 of the meat and 1/3 of the cheese.  Repeat this two more times until you have nice layers.

Cover with aluminium foil and cook for 50 minutes.  Remove the aluminium foil and cook for another ten minutes until the cheese is melted.
