Cooking For One Recipe: Bacon, Egg, and Cheese Sandwich

Welcome to Cooking For One Recipes [2]!  This series is designed for those of us who don’t need recipes for big meals- just enough for one person to eat without a ton of leftovers.  Or, if you are feeding a large family, you can certainly alter the recipes to whatever amount of people you need!

For those of you who use Pinterest [3] I have created a board that will have all the recipes from this series.  Be sure to follow it [3]!

I enjoy going to Hardee’s or McDonald’s for breakfast but after a while it adds up. In an effort to save money, I began making breakfast sandwiches at home. They are equally delicious and cheaper. A win win situation.

Ingredients:

1 English muffin

1 or 2 eggs (I only use one but if you want more protein cook 2)

3 pieces of bacon cooked

1 piece of cheese

Directions:

1. Cut english muffin in half and toast

2. Spray frying pan with cooking spray and fry eggs.

3. Just before eggs are done place cheese on top so it will melt.

4. Put egg on bottom of muffin, place cooked bacon on top and top with the top half of the muffin.

Don’t forget you can wrap these in aluminum foil and throw them in the freezer to eat later!
