Cooking for One: Beef and Broccoli

Welcome to Cooking For One Recipes [2]!  This series is designed for those of us who don’t need recipes for big meals- just enough for one person to eat without a ton of leftovers.  Or, if you are feeding a large family, you can certainly alter the recipes to whatever amount of people you need!

Typically when I think about making a chinese dish at home I tell myself that it will be too difficult and decide to make something else. Since I am off for the summer my goal is to try at least one new recipe a week so I figured I would start with Beef and Broccoli.

I am so glad I did. The recipe I found is super easy and very delicious.

Ingredients for Beef and Broccoli:

Directions:

1. In a bowl, mix together soy sauce, sherry, brown sugar, cornstarch, and ginger. Pour the liquid over the sliced meat in a bowl and toss with hands. Set aside.

2. Heat oil in a heavy skillet or wok over high heat. Add broccoli and stir for 45 seconds. Remove to a separate plate. Set aside. Note: If you are using frozen broccoli like I did you will want to partially cook it before putting it in the skillet.

3. Allow pan to get very hot again. With tongs, add half the meat mixture, leaving most of the marinade still in the bowl. Add half the onions. Spread out meat as you add it to pan, but do not stir for a good minute. (You want the meat to get as brown as possible in as short amount a time as possible.) Turn meat to the other side and cook for another 30 seconds. Remove to a clean plate.

4.Repeat with other half of meat, allowing pan to get very hot again first. After turning it, add the first plateful of meat and the broccoli. Stir over high heat for 30 seconds, then turn off heat. Check seasonings and add salt only if it needs it. Mixture will thicken as it sits.

Serve immediately over rice.

  • ½ pound Flank Steak, Trimmed Of Fat And Sliced Very Thin Against The Grain( I bought one large piece and froze what was not used)
  • ¼ cup Low Sodium Soy Sauce
  • 1½ Tablespoons Sherry Or Cooking Sherry
  • 1 Tablespoons Brown Sugar
  • 1 Tablespoons Cornstarch
  • ½ Tablespoon Minced Fresh or dried Ginger
  • 4 ounces, chopped broccoli (I used frozen)
  • ¼ cup chopped onion
  • 1½ Tablespoons Olive Oil
  • 1 cup white rice cooked according to package ( I used Boil in a Bag by Success)
