Here’s a fun spin on your everyday, traditional mint mojito. Grab the fresh raspberries and a few ingredients, you’ll have this cocktail poured into your favorite serving glass in 5 minutes or less.

What You’ll Need:

15 raspberries

10 mint leaves

2 tsp sugar

1 lime, split in half

1 1/2 cups soda water

lots of crushed ice

Directions:

1. In a large bottle or jug, combine the raspberries, mint, sugar and juice from half of the lime.

2. Cut the other half of the lime into small wedges and add to the jug. Add soda water. Shake ingredients together.

3. Divide the mixture into two tall glasses. Add 2 tbsp crushed ice to each glass and stir. Serve.

Easy Mashed Potatoes and Parsnips Recipe

While mashed potatoes are a great standard side to a wide variety of dishes sometimes you need a little something to jazz them up.   Kick up boring old mashed potatoes with a deliciously spicy root vegetable you may have never tried before- Parsnips.

They resemble a white carrot on steroids, and have a peppery and earthy flavor similar to radishes, they also provide a healthy dose of fiber and potassium. One of my favorite ways to reduce fat while keeping the creaminess and flavor of sour cream is to replace it with plain nonfat Greek Yogurt.

Another way to add richness without fat is to substitute Olive oil for butter in your recipe.  Give this recipe a try if plain mashed potatoeses and rice need a shake up as your go-to side dishes.  The parsnips can be boiled in the same pan as your potatoes and mashed right alongside as well.

 

Easy Mashed Potatoes and Parsnips Recipe

Ingredients:

5 medium sized Russet potatoes

1-2 Parsnips

½ cup Greek yogurt

3 Tbsp. extra virgin olive oil

¼ cup low sodium chicken stock

Salt and Pepper to taste

Directions:

Peel and chop potatoes.

Peel and chop parsnip(s).

Fill a large pan with water, potatoes, and parsnips.

Bring to a boil over medium-high heat.

Reduce heat, cover, and cook for 20 minutes or until fork tender.

Drain water from vegetables using a colander.

Add remaining ingredients to potatoes and parsnips.

Mix with a hand beater or table top mixer until smooth and well combined.

Non-Alcoholic Mojito Recipe

This is your “go-to” drink for your next neighborhood BBQ!  There is only one word that best describes this mocktail = REFRESHING! Perfect to sip by the beach, pool, or in your own backyard.  Grab your favorite book and the suntan lotion, you’re in for a relaxing day in the sunshine.

Ingredients:

1 lime, quartered

2 sprigs fresh mint leaves

1 tablespoon white sugar

2 slices cucumber

6 cubes ice, or as needed

4 oz club soda

Directions:

Squeeze the lime quarters into a highball glass, and drop the limes into the glass.

Add the mint leaves and sugar.

Muddle well with the back of a spoon or muddler.

Place the cucumber slices into the glass, and fill with ice cubes.

Top off with club soda, stir and serve!  Feel free to add a lime wedge, cucumber slice, or umbrella for garnish!

Flavorful, and healthy this Easy Rosemary Chicken is also simple and quick to prepare while remaining an inexpensive choice as well. It is a great dish for a busy weeknight but pretty enough to serve for a leisurely Sunday dinner.  Delicious Rosemary Chicken pairs well with wild rice, and asparagus for a healthy, filling meal.  The chicken stays moist and tender while Rosemary adds a sweet aromatic flavor.   Make extra and dice up  the chicken to top salads, use it for chicken and yellow rice, or make chicken salad, or mix into pasta salad. 

Ingredients:

4 boneless, skinless chicken breasts

2 Tbsp. extra virgin olive oil

2 cloves crushed garlic

1 Tbsp. lemon juice

1 tsp. Dried Rosemary

Salt and pepper to season.

Directions:

Preheat oven to 350°

Coat a cast iron or other oven safe skillet with olive oil.

Lay chicken breasts flat in skillet.

In a small bowl whisk; olive oil, garlic, lemon juice, and rosemary until thoroughly combined.

Easy Rosemary Chicken

Brush oil mixture over chicken breasts to coat well.

Optional- top  each piece with a fresh sprig of Rosemary to infuse extra flavor and it also makes for a pretty dish.

This is such a fun spin on a traditional mojito, but with a little extra color and flavor!

This is the perfect beverage if you’re in the mood for something refreshing – without the alcohol.  Add to your next bridal shower, engagement party, baby shower, dinner party, backyard BBQ or serve up on a tray as a wedding signature drink.  The grapefruit mock mojito is also easy to make, looks beautiful in a clear glass and is easy on the budget.  Serve up something fancy at your next event and make this drink the talk of the party!

Ingredients:

3 teaspoons granulated sugar

5 mint leaves, plus sprigs for garnish

Lime (cut into wedges)

Ruby-red grapefruit juice

Club soda/seltzer

Ice cubes

Preparation:

Place lime wedges in bottom of glass, add sugar and mint.

Muddle together.

Add ice cubes.

Add half glass of grapefruit juice and remaining glass club soda/seltzer to top glass.

Mix together and serve with sprig of mint!

This Cranberry Mojito Drink Recipe can be perfect for your special event (maybe Valentine’s Day or a Holiday Party!)

It looks beautiful in a martini glass- the perfect red color.

Ingredients:

4 sprigs fresh mint

1 package sweetener or 2 teaspoons sugar

3 ounces white cranberry juice

1 ounce fresh lime or lime juice

2 ounces club soda, chilled

6 ice cubes

lime wedge for garnish

cranberries to top

Directions:

Place 3 mint sprigs in bottom of glass, add sugar or sweetener and muddle in bottom of glass.

Add the white cranberry juice and lime juice to glass; stir.

Add club soda and ice, and top with remaining mint sprigs and lime wedge.

I poured cocktail into a martini glass to make it look like the perfect martini!

Easy No-Bake Fruit and Nut Clusters

A perfect pick me up substitute for cookies, these Fruit and Nut Clusters are a delicious alternative to less healthy snacks.  Customize them to your liking by changing up the fruit and nuts- my favorite combo is walnuts and dark chocolate chips or white chocolate chips with chopped dried strawberries.  Sub in a different nut butter for peanut butter if you prefer. 

These are great for an on the go snack or an occasional quick breakfast. The kids love them , I leave out the nuts for theirs, and I feel less guilty about giving them these than a chocolate chip cookie.   Flaxseed provides you with a healthy does of Omega 3’s and fiber, while the oatmeal adds fiber and iron.  If you use local,  raw, unprocessed honey you can add the benefit of building your immunity to local pollens.

Protein Bites Ingredients

Ingredients:

¾ cup any combination of nuts, chocolate chips and dried fruit

½ cup Peanut Butter

½ cup unsweetened flake Coconut

1 cup quick cook oats

¼ cup Honey

1-2 Tbsp. ground Flaxseed

Directions 

Combine all ingredients in a medium bowl until thoroughly mixed.

Cover, and place in refrigerator for an hour up to the next day.

Remove from refrigerator and roll into balls of about 1” diameter.

Keep refrigerated in an airtight container.

Makes about 2 dozen.

It’s that time of year where everyone starts thinking about eating healthy!  Not only do we all start thinking “I should eat breakfast” but we want it to be healthy, fast and easy.  This Simple Strawberry- Kiwi Smoothie Recipe is a great way to get your Protein (Greek Yogurt), Vitamin C (Kiwi), and all the benefits of Flaxseed.

This simple and tasty smoothie recipe does it all with just a few ingredients in a few minutes.  Besides being healthy- it is also delicious, rich, and creamy, making it a satisfying breakfast, or snack option.

You can make this smoothie from fresh fruit or pre-measure and place in a bag to store ahead in the freezer for a quick and healthy breakfast on the go.

Simple Strawberry Kiwi Smoothie

Ingredients:

1 cup Strawberries

1 Kiwi

1 cup plain Greek nonfat yogurt

1 Tbsp. honey

1 Tbsp. ground Flaxseed

½ cup skim, almond, or soy milk

Hull (or remove the top part) of your Strawberries.

This is a super easy meat that will impress anyone. I like to serve it with mashed potatoes and roasted asparagus.

Ingredients:

1 small pork tenderloin

1 sprig of fresh rosemary

1/2 cup apricot preserves

1/2 cup spicy brown mustard

salt and pepper

Directions:

1. In a small bowl mix the apricot preserves with the spicy brown mustard.

2. Place pork tenderloin in baking dish and cover with salt and pepper all over. Then sprinkle with rosemary.

3. Pour mixture over top of pork and bake covered on 350 degrees for 20 minutes.Uncover pork and baste and cook for another 15-20 minutes. Ovens and sizes of tenderloins vary so just make sure it cooks until no pink inside.

No Bake Easy 4th of July Pretzel Recipe!

I wanted to find something fun that was easy to make, had a few ingredients, and brought a new twist your guests will love at your next 4th of July picnic. Forget the pasta salad or chips and dip, you’ll be the one bringing the festive dessert (and who doesn’t like dessert)?! It’s also a no-bake recipe, so just melt the chocolate, refrigerate and enjoy.

Ingredients:

1) One Ghirardelli White Chocolate bar

2) Handful of pretzels

3) Red, white and blue sprinkles

1)      Melt the chocolate in bowl at 50% for one minute in microwave, stir, then only heat up for another 30 seconds at half power and stir. You want to be sure not to overheat the chocolate!

2)      Dip each pretzel in the white chocolate, then dip in sprinkles.

3)     Place on a baking sheet lined with aluminum foil or wax paper. When you have a tray full of pretzels, place in the fridge for 1-2 hours until chocolate has hardened.

Spring Salmon Salad Recipe (And A Whole Foods Gift Card Give Away)

There is something light and airy about springtime – you just feel a little energized, and perhaps you are Spring cleaning…out the old and in with the new. Time to re-decorate, liven up the wardrobe and freshen up the house for the summer months ahead.  Firing up the grill and lighting some tiki torches on a chilly Spring night might make for a perfect evening. I found this recipe on the Whole Foods site, and if you’re anything like me, this is definitely the time for fresh seafood and light, healthy meals.

If you have the fresh vegetable garden ready to go, this is the perfect meal for you!  If not, Whole Foods has a wide selection of some of the freshest ingredients in town – and it makes for one amazing salad. I grilled fresh Sockeye salmon that is FRESH from Whole Foods (not frozen). I’ve learned recently that some of the farm-raised seafood has high PCB levels and injected artificial colors. Here is a little bit more about why.

Here is what you’ll need to make the perfect summer salad (and if you like olives, click on the link for additional ingredients):

  • 1 navel orange
  • 1 lemon
  • 1 filet of salmon, about 1 1/2 to 2 lbs
  • 1/4 cup chopped shallots
  • Dressing
  • 1 clove garlic
  • 4 tablespoons balsamic vinegar
  • 6 tablespoons extra virgin olive oil
  • 1 teaspoon sea salt, or to taste
  • 1/2 teaspoon freshly ground black pepper, or to taste
  • 1 teaspoon fresh rosemary leaves
  • 1 red pepper, seeded and cut into quarters
  • 1 green pepper, seeded and cut into quarters
  • 4 cups washed baby salad greens
  • 1 medium cucumber, seeded and sliced
  • 12 cherry tomatoes, cut in half

Method:

In a container for marinating, zest orange and lemon. Slice orange and lemon in half and squeeze out all juice. Remove any seeds. Add juice to zest. Place salmon fillet in marinade. Cover and refrigerate for one to two hours.

In the bowl of a food processor, combine shallots, garlic, vinegar, olive oil, salt, pepper and rosemary. Blend for just a few seconds. Add olives (if desired) and bell peppers. Pulse until finely diced.

Heat the grill to medium-hot. Grill for about 10 minutes per inch of thickness. Turning is not necessary. Salmon is done when it turns a light pink color throughout.

In a large serving bowl, toss salad greens with cucumbers and tomatoes. Add diced vegetables from the food processor. Slice salmon fillet into small strips and decoratively lay on top of salad.

Cooking For One: BBQ Chicken Pizza

Welcome to Cooking For One Recipes!  This series is designed for those of us who don’t need recipes for big meals- just enough for one person to eat without a ton of leftovers.  Or, if you are feeding a large family, you can certainly alter the recipes to whatever amount of people you need!

BBQ Chicken Pizza

Ingredients:

BBQ Chicken Ingredients

  • 1 pre-made pizza crust
  • 1  uncooked chicken breast diced
  • 1/2 onion sliced
  • 1 8oz chredded cheese
  • 1/2 cup BBQ Sauce (I prefer Sweet Baby Rays)
  • Garlic, Salt, and Pepper to taste

Directions:

1. Preheat oven to 400 degrees.

2. Sprinkle stone or pizza pan with corn meal if you have it. If you do not, just spray with non-stick cooking spray.

3. Roll out dough to desired shape and place in preheated oven for 5 minutes. (we have a round and square stone so we typically make one of each for dinner)

4. While pizza dough is in the oven, saute garlic and onions together. Once they start to cook add chicken. Flavor with salt and pepper.

5. Once chicken is cooked and dough is half baked, spread 1/2 cup BBQ sauce onto pizza. Then layer a little bit of cheese. Followed by the chicken and onion mixture. Top it off with the remaining cheese.

6. Place back in oven for 10-15 minutes. My family likes the cheese to be a little bit more well done so we cook it longer, but it should be ready in 10 minutes.

Leftovers can either be packed for lunch the next day or put in a plastic freezer bag and frozen for another meal.

Tyson’s Delicious and Quick Chicken Dinner #ChickenFryTime

As educators it is a busy time of year for my husband and I. With the end of the school year fastly approaching our schedules are filled with concerts, award ceremonies, picnics, and graduations.  With a full calendar dinner can be a challenge.  Eating out gets expensive for a family of four so I have been searching for quick and delicious dinners that every one in my  family would eat (this is NOT always easy).  I am always looking for a quick chicken dinner since that is what my family prefers.

While shopping at Sam’s Club this week I spotted Tyson’s Chicken Fries (you can see my Sam’s Club trip here). The price was great for the quantity so I figured I would give them a try.

They could not have been easier to fix- just place them on a baking sheet and pop them in the oven!  If I wanted to I could use these for a quick chicken snack or appetizer as well.

The kids were happy with the chicken fries, french fries and green beans (it was a skinny food night!).  For a more grown up dinner I made the chicken fries into a wrap with lettuce, onions, cheese and ranch dressing for my husband and me.wrap final

 

It was a big success all the way around. Dinner was ready from start to finish in under 20 minutes and at the end of the meal all plates were empty!

Tyson’s Chicken Fries are just what a busy mom needs when her plate is full.  Especially at the end of the school year.

Cooking For One: Easy Shrimp Fajitas Recipe

This recipe for Shrimp Fajitas is simple and easy to do.  Plus the ingredients freeze well so you make this twice.

Ingredients:

1/2 onion sliced
1/2 bag frozen mixed peppers
1/2 lb easy peel shrimp
Fajita Seasoning (you can buy pre-made or make your own with the recipe below)

1 tablespoon cornstarch
2 teaspoons chili powder
1 teaspoon salt
1 teaspoon paprika
1 teaspoon sugar
3/4 teaspoon crushed chicken bouillon cube
1/2 teaspoon onion powder
1/4 teaspoon garlic powder
1/4 teaspoon cayenne pepper
1/4 teaspoon cumin

Directions:

1. In a saute pan, heat 1 tblspn oil and then add onion and frozen peppers.

2. While vegetables are sauteing, mix the fajita seasoning together.

3. Peel shrimp.

4. Once peppers and onions begin to get tender, add shrimp and sprinkle fajita seasoning on top.  Cook together for about 5 minutes or until shrimp is cooked through.

Optional:

5. Serve hot in a tortilla shell with lettuce, tomatoes, sour cream, and cheese.

Even if you normally cook for one, there are times when you need a recipe that feeds more than one. Whether it be for a bbq or a potluck, baked pineapple is my go to recipe for such an occasion. It has been in my family for years and is a guaranteed crowd pleaser.

Baked Pineapple

Ingredients

Ingredients:

1 large can crushed pineapple
2 tblspns flour
1 egg
1/2 cup sugar
6 slices of bread cubed
1/2 stick butter melted

Directions:

1. In medium bowl mix pineapple, flour and sugar together.
2. Beat egg in separate bowl and then add to pineapple. Stir Well. (stirring well to incorporate the egg is very important)
3. Pour mixture into a greased 8×8 baking dish.
4. Melt butter in the microwave for about 40 seconds. Pour melted butter over bread cubes.
5. Make sure all bread cubes have been coated with butter and then spread the bread cubes evenly over top of the pineapple mixture.
6. Bake in a 350 degree oven for 20-30 minutes. You want to bake it until the bread topping gets brown and crispy.

This would be a yummy, easy treat to share with friends!

Now I realize that Baked Grapefruit with Cinnamon sounds pretty disgusting.  And when I was told about it I had that same thought.  But my mom and sister swore by it so I figured I would give it a shot.  It’s one of my new favorite snacks!

Grapefruit
Cinnamon
Honey (optional)

Directions:

Preheat oven to 350 degrees
Slice grapefruit in half and place on baking sheet
Sprinkle desired amount of cinnamon on top (add honey if you would like)
Put in oven for 15 minutes

After 15 minutes you can pull it out and eat with a spoon!  It makes a great snack at night while I am watching television!
