Although I don’t have a garden (one of the hazards of condo living) there are several Farmer’s Markets near my house that provide me with just about any fresh garden veggies I could want.  This time of year I see Kale all the time and never know what to do with it.

From the research I see online Kale is very good for you and has tons of vitamins.  And I am pretty sure I can take any vegetable and make it taste better with Apples and Bacon!

Here is a simple and delicious Balsamic Vinaigrette Salad Dressing Recipe for delicious summer salads, pasta, or fresh tomatoes, basil, and mozzarella.   Easy and inexpensive you won’t want store bought vinaigrette dressing again! This recipe takes less than 5 minutes to make from start to finish and will be a hit.

Ingredients:

2 Tbsp. Balsamic Vinegar

2 tsp. Dijon mustard

2 tsp. brown sugar

1 clove garlic, crushed

1/4  cup olive oil

salt and pepper to taste

Directions:

Place all ingredients in a small container and shake well to blend.

Easy Pasta Sauce Recipe

Easy Pasta Sauce Recipe

While I am not above ready to go pasta sauce from a jar or can to top my pasta. Sometimes I want a more complex homemade flavor, but I do not want to spend hours cooking down fresh tomatoes. This is my compromise, it definitely  tastes fresher than the jar but can be ready in as little as 20 minutes (but the longer you cook it the more the flavors blend and develop). This easy pasta sauce recipe is simple to make from items that are probably already sitting in your pantry.  Making a meal without meat also makes for a frugal dish as well.

Ingredients:

2-1 4 oz. cans of diced tomatoes (garlic, basil flavored is best)

4 Tbsp. olive oil

2 cloves crushed garlic

1/2 cup grated parmesan

1 tsp. Italian seasoning

Directions:

Lightly brown garlic with olive oil in a medium saucepan over medium heat.

Stir in diced tomatoes, grated Parmesan cheese, and Italian seasoning.

Reduce heat to low and simmer for 20-45 minutes.

If you want your sauce smoother you can puree it until desired  consistency is reached in a blender, processor, or with an immersion blender.

Remember to vent the blender when using hot liquids or you will have a kitchen  covered in red sauce and some significant burns.

Serve over your favorite pasta.

Veggie Stir Fry Recipe

Stir Fry is a great choice for a quick and easy meal.  If you choose veggies that can also give you a great break on your grocery bill (meatless is often cheaper).

One of the best  things about a stir fry is that you can use whatever you have on hand and change your oil or sauce to create a completely different flavor.

Use fresh veggies, frozen or a combination of both to create a bowlful of your favorite vegetables.

Ingredients:

3 cups fresh or 1 bag frozen stir fry blend-any combination of  bell peppers, onions, broccoli florets, mushrooms, carrots, snow peas, and water chestnuts.

2 Tbsp. soy sauce

1 tsp. fresh or dried ginger

2 Tbsp. cornstarch

1/2 cup water

Sesame or Canola oil to coat pan

Directions:

Heat oil over medium high heat on stove top.

Toss in vegetables and sauté about 5-6 minutes

Stir in soy sauce, cornstarch, water, and ginger, simmer for 2 additional minutes to thicken.

Flourless Chocolate Cake Recipe Easy

This Flourless Chocolate Cake Recipe is decadent and rich without being overly sweet, made with bittersweet chocolate it provides  just the right amount of sweetness.  While it looks difficult to make it is really simple with a hand or stand mixer. The cake remains moist even after a long cooking time, almost like a molten cake, with slightly crisp edges. Ideal for those looking for gluten free deserts but delicious for anyone, I think the texture without  the flour is much better than a recipe with.

Ingredients:

6 eggs, separated

6 Tbsp. butter

10 oz. bag bittersweet chocolate chips

1/2 cup granulated sugar

1 tsp. Almond extract

Directions:

Preheat oven to 275 degrees.

Butter a 9 inch springform pan, on bottom and sides.

Combine chocolate chips and butter in microwave safe dish, cook in 30 second increments, stirring each time until chocolate is melted thoroughly.

Whisk in egg yolks until well blended.

Using a hand or stand mixer, whip eggs until soft peaks form-mixture will be slightly  thickened and fluffy.

Gradually add in sugar and mix until stiff peaks are formed.  They are ready when you lift the mixer and  eggs mixture maintains its shape on the whisk.

Fold in ( this is done by using the spatula to fold mixture over onto itself gently) chocolate mixture a little at a time until all of it has been incorporated.

Spoon into prepared pan, smoothing top with spatula.

Bake for 40-45 minutes until edges of cake pull away from sides of pan.

Sprinkle top with powdered sugar if desired to dress it up.

TWIX Stuffed Cookie Recipe

Back in college I was sent a care package filled with various kinds of cookies. My favorite in the tin was a TWIX stuffed cookie that was soft, chewy, crunchy  and chocolaty all at the same time.

10 years later I still remember that cookie and how scrumptious it was but  have never attempted to replicate it. My main reason for not attempting was because the thought of unwrapping all of the mini TWIX bars was daunting.

I used to love eating Salisbury Steak from the box in the frozen section, but as I have gotten older my tastes have changed and I would much rather have homemade over prepackaged any day.  But homemade oftentimes means a long list of ingredients and a lot of work.  But this Homemade Salisbury Steak truly is simple and quick to pull together- just 5 ingredients, less than 30 minutes start to finish, and dinner is ready to set on the table. Serve with mashed potatoes or butter noodles.

Ingredients:

1-1 1/2 lbs. of lean ground beef

1 egg

1 medium onion

1 10 1/2  oz. can of beef gravy

Pepper and garlic salt to taste

Healthy Beef Stir Fry

Healthy Beef Stir Fry

This Healthy Beef Stir Fry makes for a quick meal, perfect for the end to a busy work day. This recipe is better than take out with far fewer unpronounceable additives, preservative, and who knows what else. Just  5 ingredients work together to create a dish that is light in fat but heavy in flavor.

To keep it healthy use lean cuts of beef-top or bottom round, sirloin, tenderloin, etc.  Using a nonstick pan will mean you use less oil, cutting back on even more fat. Serve over brown rice for an even healthier dinner with added fiber.

Ingredients

1 lb. beef strips, lean cut

1 head of broccoli or add as many veggies and you like!

2 Tbsp. low sodium soy sauce

2 Tbsp. cornstarch

1 cup low sodium beef broth

canola or vegetable oil to coat pan

Directions:

Whisk beef broth, soy sauce, and cornstarch together in a small bowl.

Healthy Beef Stir Fry

Wash broccoli and chop into small florets.

Drizzle just enough oil to coat pan.

Heat oil over high heat.

Add broccoli and sauté for 2-3 minutes.

Stir in beef and soy sauce mixture.

Continue to cook for an additional 7- 8 minutes until beef is thoroughly cooked, broccoli softened, and most liquid has been absorbed.

Serve over rice or noodles.

Directions:

Melt butter in a small saucepan over medium heat.

You can very easily reduce the amount of sugar called for if you prefer a less sweet version- 1/2 cup in the filling and reduce to 1 Tbsp. in the topping.  Fresh or frozen strawberries or rhubarb will work if you aren’t able to find any in season.

Ingredients:

Filling:
4 cups rhubarb, chopped
2 cups strawberries sliced
1 cup granulated sugar
2 Tbsp. cornstarch
1/8 tsp. salt

Topping:
1 cup all-purpose flour
1 Tbsp. granulated sugar
1 Tbsp. brown sugar
1/2 stick (4 Tbsp. cold butter)
1/8 tsp. salt
1 egg
1/4 cup milk

Chicken Marsala With Mushrooms Recipe

Chicken Marsala is a popular dish at Italian restaurants but it is so simple that you can stay home  and recreate it for an evening in.  Masala wine and mushrooms compliment one another to create the amazing  sauce that makes up Chicken Marsala, with a creamy and rich twist on the original.

If you want a lighter sauce simple leave the cream off at the end of the recipe. Just a few simple steps will have you sitting down to a restaurant worthy dinner-high in flavor, low in cost, effort, and time.

Ingredients:

4  boneless skinless chicken breasts
1/2 cup Marsala wine
1 cup fresh, sliced mushrooms
1/2 cup heavy cream or half and half
1/2  tsp. dried Oregano
1-2 Tbsp. Olive oil
Salt and pepper to taste

Directions:

Slice chicken breasts in half  or to 1/2″ thickness.

Saute chicken and olive oil in a large skillet for 15-20 minutes until no longer pink/juices run clear.

Add in wine, scrapping up all the little flavor bits in the pan as you stir.

Cover and simmer for 3-4 minutes.

Add in Oregano, salt and pepper taste.

Cookie Dough Dip Recipe

I am always looking for something unique to take to parties and this Cookie Dough Dip Recipe is perfect.  Sweet and rich- just like you are eating cookie dough, and  minus the flour and eggs!  Graham Crackers, Nila Wafers, fruit, or shortbread cookies make the perfect vehicle for moving this yummy dip into your mouth. Or you can just use a spoon and keep it all to yourself!

Ingredients:

1 stick Butter (8 Tbsp.) softened

1/3 cup brown sugar, packed

1  8 oz. cream cheese, softened

1/2 cup powdered sugar

1 cup milk or semi sweet chocolate chips

1 tsp. vanilla

Directions:

Melt butter in a small saucepan over medium heat.

 Whisk in brown sugar until it  is dissolved and mixture is bubbling.

Cookie Dough Dip Recipe

Remove from heat and set aside, allow to cool to room temp.

In a hand or stand mixer combine cream cheese, powdered sugar and vanilla until smooth.

Blend in butter mixture.

Fold in chocolate chips.

Chocolate Chip Cookie Dough Dip

Ingredients
  • 1 stick Butter (8 Tbsp.) softened
  • ⅓ cup brown sugar, packed
  • 1 8 oz. cream cheese, softened
  • ½ cup powdered sugar
  • 1 cup milk or semi sweet chocolate chips
  • 1 tsp. vanilla
Instructions
  1. Melt butter in a small saucepan over medium heat.
  2. Whisk in brown sugar until it is dissolved and mixture is bubbling.
  3. Remove from heat and set aside, allow to cool to room temp.
  4. In a hand or stand mixer combine cream cheese, powdered sugar and vanilla until smooth.
  5. Blend in butter mixture.
  6. Fold in chocolate chips.
  7. Refrigerate until ready to serve.

Earth Day Cupcakes

If you need an Earth Day idea for whipping up at home with the kids, taking to the office or sharing with your child’s class this one is perfect! A simple box mix and store bought frosting become something special with a few added ingredients, and a creative finish.  Resembling freshly turned earth and a tree just planted, to honor Earth Day this topping is fun, simple  and pretty to create. Set up a small assembly line to put these cupcakes together and have them turned out in no time.

Ingredients:

1 box devil’s cake mix

1 container chocolate frosting

16 Oreo’s or other chocolate sandwich cookie

large package gummi worms

24 small lollipops

24 paper cupcake liners

Directions:

Preheat oven to 350 degrees

Prepare cake mix according to package directions, except use  applesauce for oil.

Fill cupcake liners 2/3 full.

Bake for 18-20 minutes, stick a toothpick in center to check for doneness- if toothpick comes out clean they are ready.

Allow cupcakes to cool completely.

While cupcakes are cooling- pull apart chocolate sandwich cookies and scrape out white filling (what you do with the filling is up to you, no judgment here)

Place cookies in blender, food processor, or coffee grinder and pulse until they are crushed into a fine  powder.

Stir 1 tsp. of almond extract into frosting container.

Lightly frost cupcakes.

Pour crushed cookies into a shallow bowl, and dip cupcakes into the cookies, coating frosting well.

Bourbon Glazed Salmon

 Delicious and flavorful Bourbon Glazed Salmon with a hint of ginger makes for a fabulous dinner choice, whether you are entertaining friends or enjoying a simple dinner for one.  If you love salmon already or you are looking for a tasty way to get some omega-3 fatty acids into your diet this recipe is sure to please, and with only 5 ingredients it couldn’t be easier to prepare.  Serve over white or wild rice with a side of asparagus.

Ingredients:

2 -6 oz. Salmon Filets

3 Tbsp. Bourbon

2 Tbsp. Soy sauce

2 Tbsp. Honey

1-2 cloves Garlic, crushed

sea salt and black pepper to taste

Preheat oven to 450 degrees

Place salmon filets skin side down on a parchment paper  lined baking sheet.

Salt and pepper salmon filets.

Whisk bourbon, soy, honey, and garlic in a small pan over medium heat for 5 minutes until thickened.

Baked Chicken Recipe

Not only does this Baked Chicken Recipe look beautiful to serve but it is moist and full of delicious Italian flavors.  If you have ever wanted to try baking your own chicken but have been intimidated by how difficult it looks, try this simple recipe and impress yourself and everyone else by putting this on the table.  Leftovers can be sliced or shredded and used in- enchiladas, sandwiches, casseroles, chicken salad, pot pie, and more!

 Ingredients:

1 whole chicken

2Tbsp. Extra Virgin Olive Oil

1 small orange or lemon

1 1/2 tsp. Garlic salt

2 tsp. dried Rosemary

pepper and sea salt to  taste

Baked Chicken Recipe

Directions:

If your whole chicken contains a bag inside (giblets), remove and discard.

Rinse chicken inside and out thoroughly and pat dry.

Preheat oven to 325 degrees

In a small bowl combine; juice of small orange, olive oil, rosemary, pepper  and garlic salt, whisking well.

Roast Chicken

Rub or brush olive oil mixture all over outside of chicken.

Lay chicken breast side down in roasting pan, place squeezed orange halves in cavity with a few pieces of fresh Rosemary if desired, to boost flavor even more.

Bake chicken for 45-60 minutes until thermometer, inserted in center of thigh reaches 165 degrees.

Easy Beef Pot Pie

Easy Beef Pot Pie

An incredibly easy and quick meal this Easy Beef Pot Pie is filling and delicious. Ideal for a busy weeknight, just a little bit of time and a few simple ingredients and a hearty, filling dinner is ready to put on the table.  Prepared in a cast iron skillet start to finish means there is only one pan to wash to keep the simplicity theme going.  This meal can easily be prepared ahead of time, just add biscuits when you are ready to pop it into the oven.

Ingredients:

1 lb. ground beef

1  8-10 count can biscuits

1 -14.5 oz. Can mixed vegetables

1 jar or can beef gravy

1 tsp. Garlic salt

salt and pepper to taste

Directions:

Preheat oven to 350°

Brown ground beef over medium heat until cooked through, drain excess fat if any.

Beef Pot Pie

Stir in mixed vegetables and gravy, stir to combine well.

Easy Beef Pot Pie

Add garlic salt, and salt and pepper.

Top meat filling with uncooked biscuits.

Place pan in oven and cook for 8-10 minutes or until biscuit tops are golden brown.

Hot Cocoa Marshmallow Cupcakes

Hot Cocoa Marshmallow Cupcakes

These Hot Cocoa Marshmallow Cupcakes are completely adorable.  I think they would make fantastic gifts if you prepared them IN coffee cups before you decorate them.  Wrap them in cellophane and you have a perfect gift for many occasions!

And, much to my surprise, they were SUPER easy to do.  I had a friend helping me who is creative.  She took two seconds and said “like this?” and it was perfect.

Ingredients
– Whatever chocolate box cake you would like to make (or you can make from scratch)
– Icing (you can either make your own or use store bought since the icing is simple)
– Mini Marshmallows
– Hershey’s Unsweetened Cocoa Powder
– Red and White Striped Straws (I got mine at Target or you can order through the link)

Directions 
– Make the cupcakes according to box.  Be sure to let them cool completely.  (Since this decoration is pretty easy you can do it on small or large cupcakes.)

– To make the icing shape on the top we used an Wilton Extra-Large Round Tip #1A .  Basically any open tip will work- you just need the opening to be fat.

– To get the mocha color I wanted for the “froth” we used Wilton Paste Colour – Brown and then slowly added blue food coloring until the color was perfect.  You do want to stir it to be sure to get that smooth look.  Between the stirring and the tip you should be good.

– You can see in the picture above we did three different shapes for the froth

1.  Starting in the very middle of the cupcake swirl counter clockwise out until you have a nice circle.  That’s how I did the little one on the bottom.

2.  If you like the one on the left pretend to draw a daisy.  Start in the center and draw out five or six filled in petals.

3.  If you like the one on the right (my more experienced friend did that one) start in center and make circles with wavy edges.

Pretty much with the icing you just need a glob. I am by no means an icing expert and I was able to make it look okay.

– Place three or four marshmallows on top of the froth.

– Sprinkle a little bit of the Unsweetened Cocoa Powder on the top.

– Cut the straw to the desired length and insert it into the cupcake.

And NOW you are done!  It really was so much more simple than I thought it would be.

Texas Caviar (With Vinegar and Sugar)

Texas Caviar With Vinegar Sugar- this is my GO TO dish when I have to bring something to a party.  I took it to my favorite Oscar Party this year and it was gone before the host changed clothes.

I want to make sure you see that this needs atleast 24 hours to marinate.  And honestly, the longer it sits the better it is.  I have often found that if the chips are not near the bowl people will just eat it with a fork/spoon and plate.  So if you want to skip the chips you can.

Ingredients
15 oz can Garbanzo Beans
15 oz cans Black Beans
15 oz can Black Eyed Peas (my local store had them in cans but if you can’t find them just be sure to soak overnight the ones in the bag)
2-11 oz cans White Shoepeg Corn
1 cup Green and Red Peppers chopped
1 cup celery chopped
1 medium Sweet Onion chopped

Texas Caviar With Vinegar Sugar

To Make The Dressing
3/4 cup Apple Cider Vinegar
1/2 cup Vegetable Oil
3/4 cup Sugar
2 tablespoons water
1/2 teaspoon each- salt and pepper

Directions
– Combine all ingredients on the top list. You will need a good sized bowl.

– Using a small pot, mix together the ingredients for the dressing and bring to a boil, stirring occasionally.
– Combine dressing with ingredients in bowl.
– Mix well.
– Allow to marinate 24 hours.
– Serve with chips and enjoy!

Easy Chicken and Dumplings

When the weather is cold and dreary all you want to do is curl up inside with a bowl of comfort food. You will definitely want to reach for this simple and hearty recipe for Chicken and Dumplings with tender pieces of chicken in a light broth and topped with delicious dumplings.  This one pot meal will warm you from the inside out and will be a hit with the entire household. Only 5 ingredients, a little bit of time and you will be enjoying a steaming bowl of Chicken and Dumplings, a cold weather southern favorite that has stood the test of time for good reason.

Ingredients:

3 boneless, skinless chicken breasts

2 celery stalks (and any other veggies you might like)

3 quarts chicken broth

1 small onion

1 ½ cups all-purpose flour

3/4 cup cold water

Salt and Pepper to taste

Directions:

Dice chicken breasts into 1”x1” pieces.

Wash and dice celery into small pieces.

Peel and dice onion into small pieces.

Combine chicken, celery, onion, and chicken broth in a large pot with a lid.

Simmer  for 30 minutes, until chicken is cooked throughout.

For Dumplings:

Mix 1 tsp. of salt with flour.

Pour cold water slowly into flour to form a sticky dough

Spoon dough by the spoonful into simmering broth.

Continue to simmer, occasionally stirring until dumplings are no longer doughy and

float to the top of the broth.

Serve and Enjoy!
