Orange Garlic Chicken

Forget calling for takeout or delivery when it is nearly as easy (not to mention less expensive and healthier too) to make your own.  Using just 5 common ingredients that are probably already in your pantry and fridge you can serve a delicious homemade healthy chicken stir fry recipe.  This dish is easy to adjust to serve more or less people,  or to go lighter or heavier with flavoring.  Sesame oil will give you a slightly more authentic Asian taste but you can use vegetable or canola oil to fry in as well. Chicken stir fry is a quick, healthy meal that will make everyone happy and requires minimal fuss on your part.

Ingredients:

1 bag frozen stir fry peppers and onions

3 boneless, skinless chicken breasts

1/4 cup soy sauce

1/2 cup fresh orange juice

3 cloves fresh garlic

salt and pepper to taste

oil for pan

Orange Garlic Chicken

Directions:

Partially frozen chicken breasts are the easiest to cut- season chicken with salt and pepper then slice into 1/4″ strips.

Orange Garlic Chicken

Drizzle oil in pan- enough to moisten bottom of pan, and heat pan to medium high heat.

Sautee chicken strips until mostly cooked throughout.

Add vegetables and garlic, cook until vegetables are tender-about 5-7 minutes.

Stir in orange juice and soy sauce, turning to coat, cook and additional 2 minutes.

Serve over rice.

  • - 3 boneless, skinless chicken breasts
  • - ¼ cup soy sauce
  • - ½ cup fresh orange juice

Instructions

It is the time of year when gardens are bursting forth with all kinds of goodness!

While I don’t have a garden I have a wonderful Farmer’s Market around the corner.  I have to confess- many times when I go there I have no idea what I would make with the vegetables.

Lemon Cupcakes From Scratch

Lemon is my favorite flavor on earth.  If you put a giant chocolate cake next to a lemon pie, the lemon is going to win every single time.  And it will be gone before the chocolate is even touched.

So I was excited to get to work on Lemon Cupcakes From Scratch.  And when we got in the kitchen it turned out better than I could have hoped.

Ingredients:

  • 1.5 cups unsalted butter at room temperature
  • 2 cups granulated sugar
  • 3 eggs
  • 3 egg yolks
  • 2 tablespoons Country Time Lemonade Mix (to taste)
  • 3 cups flour
  • 1.5 tsp baking powder
  • 1 tsp baking soda
  • .5 teaspoon kosher salt
  • 1 cup of sour cream
  • 1 quarter cup half and half
  • Yellow Food Coloring (if you like)

Directions:

1. Cream the butter and sugar.
2.  In a separate bowl whip eggs, egg yolks and vanilla
3.  Add egg mixture to butter mixture.
4.  Mix until thoroughly combined.
5.  In another bowl sift flour, baking powder, baking soda and salt together.
6.  Add 1/3 of flour to butter and egg mixture.
7.  Stir until just combined.
8.  Add half of sour cream and half of half and half.
9. Stir to combine.
10.  Add 1/3 of flour.
11.  Stir to combine.
12.  Add remaining sour cream and half and half.
13.  Stir to combine.
14.  Add remainder of flour and combine by hand.
15.  Pour into pan.

Preheat the oven to 350 degrees.    It should be about 25 minutes for regular cupcakes and 28 minutes for jumbo cupcakes.

We used a lemon icing recipe we found online but you could use just about any type of icing you wanted!

Angel Hair Pasta Salad Recipe

Angel Hair Pasta Salad Recipe

Hot temperatures mean time for lighter dishes with fresh summer ingredients.  One of my favorite go to sides  for indoor or outdoor eating is this simple, light Angel Hair Pasta Salad Recipe.  5 ingredients,  and less than 15 minutes prep and cook time, a little chill in the fridge and your dish is ready to go on the table. Serve beside hamburgers, ribs,  or whatever your favorite summertime main dish is.

Ingredients:

2 yellow  squash and/or zucchini

1/3 cup Italian dressing

1/4 cup parmesan cheese

10-12 cherry tomatoes

12 oz. angel hair pasta, uncooked (about 3/4 pack)

salt and pepper to taste

Directions:

Halve cherry tomatoes, dice squash/zucchini

Boil angel hair pasta according to package directions.

Add squash/zucchini to boiling pasta during last 2-3 minutes to soften just a bit.

Drain pasta and vegetables, run cold water over to stop cooking and reduce temp.

Toss pasta, vegetables, Italian dressing, Parmesan cheese,  and tomatoes well to coat completely.

Salt and pepper to taste.

Place in refrigerator for at least an hour to chill and combine flavors

Lemon Sugar Cookie Recipe

Sometimes you want a treat that isn’t super heavy or that will make your spin head with sugar!   This Lemon Sugar Cookie Recipe fits the bill, just 5 simple ingredients, 1 bowl, and less than 20 minutes- you end up with a cookie that is light, crisp, and perfectly flavored.   Lightly sweetened with a lemony tang they are perfect for summer. Using fresh lemon instead of artificial lemon flavoring really makes these special and a little more “gourmet”.

Ingredients:

1 whole lemon

1 1/2 cups flour

1 cup sugar

2 eggs

1 tsp. baking powder

Directions:

Begin by preparing your lemon as we are going to use two parts- zest and juice.

Preheat oven to 325 degrees

Juice your lemon, you will need 2 tsps. lemon juice.

Zest 2 tsps. lemon using a special zesting tool or the smallest holes on a hand grater. Zest gently you only want the yellow zest, not the white- it is bitter.

Lemon Sugar Cookie Recipe

 In a large bowl with a hand or stand mixer whip eggs until frothy.

Add sugar and beat until smooth.

Mix in flour, baking powder, lemon zest and juice until just blended.

Lemon Sugar Cookie Recipe

Drop by heaping spoonful’s on to a baking sheet lined with  foil or nonstick spray.

Bake for 9-11 minutes, remove just before they brown.

Store in an airtight container, if you like your cookies a little softer store with a piece of bread, your cookies will absorb the moisture from it and soften up.

Fresh Kale Recipes

Although I don’t have a garden (one of the hazards of condo living) there are several Farmer’s Markets near my house that provide me with just about any fresh garden veggies I could want.  This time of year I see Kale all the time and never know what to do with it.

From the research I see online Kale is very good for you and has tons of vitamins.  And I am pretty sure I can take any vegetable and make it taste better with Apples and Bacon!
