Chicken with Mushroom Sauce Recipe

I needed a simple Chicken with Mushroom Sauce Recipe.  I had a more complicated recipe for chicken and mushrooms that included wine and shallots and several other ingredients that I made often.  However, this recipe was born of necessity,  needing to use what I had on hand instead of making a run for the store I had to make it a little simpler. It worked out deliciously and is much quicker to prepare- just 7 ingredients ( I had to cheat a bit on our 5 ingredients or less recipes) and it still has tons of flavor. It is a rich, comfort food that is good enough for company and easy enough to make after a long day of work-since it takes less than 30 minutes start to finish.

  Ingredients:

4 large chicken breasts

4 Tbsp. butter

1 cup chicken broth

1/4 cup milk

1 Tbsp. Balsamic Vinegar

12- oz. can mushroom pieces

1 Tbsp. all-purpose flour

Salt and Pepper to taste

Directions:

Melt 2 Tbsp. of butter in a large saucepan.

Brown chicken in butter over medium heat on each side for  5-6 minutes.

Remove chicken from pan, set aside.

 Add mushrooms, scrape all the bits up from bottom and sauté until mushrooms begin to brown.

Whisk in flour, then chicken stock, balsamic vinegar,  remaining butter and milk.

Simmer for 3-4 minutes on medium high heat, until thickened.

Return chicken to pan and allow to cook an additional 5 minutes.

Serve with egg noodles, orzo, or over mashed potatoes.

Ingredients

Easy Beef Pot Pie

An incredibly easy and quick meal this Easy Beef Pot Pie is filling and delicious. Ideal for a busy weeknight, just a little bit of time and a few simple ingredients and a hearty, filling dinner is ready to put on the table.  Prepared in a cast iron skillet start to finish means there is only one pan to wash to keep the simplicity theme going.  This meal can easily be prepared ahead of time, just add biscuits when you are ready to pop it into the oven.

Ingredients:

1 lb. ground beef

1  8-10 count can biscuits

1 -14.5 oz. Can mixed vegetables

1 jar or can beef gravy

1 tsp. Garlic salt

salt and pepper to taste

Directions:

Preheat oven to 350°

Brown ground beef over medium heat until cooked through, drain excess fat if any.

Stir in mixed vegetables and gravy, stir to combine well.

Add garlic salt, and salt and pepper.

Top meat filling with uncooked biscuits.

Place pan in oven and cook for 8-10 minutes or until biscuit tops are golden brown.

Easy Chicken Teriyaki Recipe


I love Chinese Food but it is SO unhealthy.  Anytime I can make it at home where I control the ingredients (and fat) I always try.  That’s why I was thrilled with this yummy Easy Chicken Teriyaki Recipe.  

Ingredients

1 lb. skinless, boneless chicken breasts

¾ cup soy sauce

¼ cup honey

1  tsp. ground Ginger

1 Tbsp. Sesame or vegetable oil

Directions:

Use a sharp knife to cut chicken into small bite size pieces, ½ “x ½ ” is a good size.

In a small saucepan combine soy sauce and honey over medium heat and simmer until honey is completely dissolved, stirring constantly.  Add ginger and stir until combined. Set sauce aside.

Heat oil in a large frying pan over high heat, then add the chicken and cook for about 3-4 minutes, turn chicken over  and cook another 3 minutes on the opposite side.

Reduce to medium heat, drizzle Teriyaki sauce all over chicken and stir to coat well, cook an additional 3-5 minutes, stirring well  until sauce thickens.

Top with chopped scallions and serve over rice.
