Easy Beef Pot Pie

An incredibly easy and quick meal this Easy Beef Pot Pie is filling and delicious. Ideal for a busy weeknight, just a little bit of time and a few simple ingredients and a hearty, filling dinner is ready to put on the table.  Prepared in a cast iron skillet start to finish means there is only one pan to wash to keep the simplicity theme going.  This meal can easily be prepared ahead of time, just add biscuits when you are ready to pop it into the oven.

Ingredients:

1 lb. ground beef

1  8-10 count can biscuits

1 -14.5 oz. Can mixed vegetables

1 jar or can beef gravy

1 tsp. Garlic salt

salt and pepper to taste

Directions:

Preheat oven to 350°

Brown ground beef over medium heat until cooked through, drain excess fat if any.

Stir in mixed vegetables and gravy, stir to combine well.

Add garlic salt, and salt and pepper.

Top meat filling with uncooked biscuits.

Place pan in oven and cook for 8-10 minutes or until biscuit tops are golden brown.

Easy Chicken Teriyaki Recipe


I love Chinese Food but it is SO unhealthy.  Anytime I can make it at home where I control the ingredients (and fat) I always try.  That’s why I was thrilled with this yummy Easy Chicken Teriyaki Recipe.  

Ingredients

1 lb. skinless, boneless chicken breasts

¾ cup soy sauce

¼ cup honey

1  tsp. ground Ginger

1 Tbsp. Sesame or vegetable oil

Directions:

Use a sharp knife to cut chicken into small bite size pieces, ½ “x ½ ” is a good size.

In a small saucepan combine soy sauce and honey over medium heat and simmer until honey is completely dissolved, stirring constantly.  Add ginger and stir until combined. Set sauce aside.

Heat oil in a large frying pan over high heat, then add the chicken and cook for about 3-4 minutes, turn chicken over  and cook another 3 minutes on the opposite side.

Reduce to medium heat, drizzle Teriyaki sauce all over chicken and stir to coat well, cook an additional 3-5 minutes, stirring well  until sauce thickens.

Top with chopped scallions and serve over rice.

Easy Beef Goulash Recipe

This Easy Beef Goulash recipe is perfect for cold nights, it is simple and a quick dish to make but doesn’t lack flavor- a classic dish with many variations that has been around for years.   It is made with only 5 basic ingredients that are pantry staples for most of us, and requires only one pot to make- I for one will do anything to avoid a sink full of dishes! This freezes and reheat great for an even quicker dinner at a later date, and is a great inexpensive recipe to make for a big crowd. Serve with a side of bread and green beans for a complete and filling meal.

Ingredients:

 1 lb. ground beef

2 ½  cups uncooked Elbow noodles

2-28 oz.  cans crushed tomatoes

1 ½ tsp. Garlic salt

1 tsp. Italian seasoning

Salt and Pepper to taste.

 Directions:

In a large saucepan over medium-high heat boil noodles for 7-9 minutes or until tender.

Drain noodles in a strainer and set aside.

In the same pan -brown ground beef until cooked throughout.

Drain any excess grease out of pan.

Turn heat down to low.

Return noodles to pan.

Stir in crushed tomatoes, garlic salt, Italian seasoning, salt and pepper.

Allow to simmer for 10 minutes to heat throughout.

Serve and Enjoy!

To add a little topping to your dish try; sour cream, scallions, and shredded cheese.
