Harris Teeter Recipe of the Week 3/17- Mango Chicken

A big thank you to Sharon at Mom on Dealz for the Harris Teeter recipe this week! Everything in this recipe is on sale this week at your local Harris Teeter (or you could just try it yourself!)

Here is this week’s frugal recipe based on Harris Teeter’s weekly ad:

Ingredients:
3.5 pounds Split Chicken Breast $3.46
1 mango (peeled, seeded, and sliced) $0.99
2 cups Simply Orange Juice $1.50
1 tablespoon Kikkoman soy sauce $1.45
Harris Teeter Zatarain’s Wild Brown Rice Mix $1.55
2 tablespoons HT cornstarch $0.97
1 tablespoon olive oil ( assume on hand)
1/4 cup hot water
Total: $9.87

Directions:
1. Prepare rice according to directions.
2. Brown chicken in oil.
3. Add orange juice and soy sauce; bring to a boil.
4. Add mango pieces and simmer 2-3 minutes.
5. Combine hot water and cornstarch and whisk until dissolved. Add to pan.
6. Continue cooking until sauce thickens, stirring frequently.
7. Serve over prepared rice.

Harris Teeter Frugal Recipe of the Week- Colcannon

Time for some Irish food! You can add corned beef for just a few dollars more!

A big thank you to Sharon at Mom on Dealz for putting this together!

Ingredients:
3 lb potatoes $3.97 (on sale for 8 pounds)
1 lb shredded cabbage $0.79 (on sale $2.37/3 pounds)
3 tablespoons butter (assume you have on hand)
1 1/4 cup milk $2.89
pepper to taste (assume on hand)
1/2 cup thinly sliced onion $0.47
Total=$8.12 ( a little high but you will have a lot of potatoes and milk left over)

Directions:
1. Cut potatoes into small pieces and boil until tender. Set aside.
2. Heat butter and onion over medium heat in skillet. Add cabbage and cook until cabbage starts to brown.
3. Reduce heat to low, add milk and pepper. Cover and cook until cabbage becomes tender.
4. Combine potatoes and cabbage/onion and mash.

Harris Teeter Frugal Recipe of the Week

Each week Sharon at Mom on Dealz creates a yummy recipe from items that are on sale at Harris Teeter.  This week it is a sausage and pepper sandwich!

This recipe is based on the sales ad for Harris Teeter this week (3/2-3/8).

Ingredients:
**Hillshire Farm Smoked Sausage BOGO $2.08

**Birds Eye Stir Fry Peppers EVIC $1.32

**Kings Hawaiian Sub Rolls $2.49
-$1 RP 12/12 (if applies)=$1.49

**Prego Sauce EVIC $1.37
-$0.60/2 SS 1/2=$0.77 each

**Birds Eye Steamfresh Veggies $1.32
-$1/3 SS 1/23=$0.99 each

Final Cost of Meal=$6.65

Directions:
1. Slice sausage according to your preference (we slice into small chunks).
2. Put sausage in the pan with peppers and brown.
3. Add spaghetti sauce to pan and heat.
4. Prepare Steamfresh veggies according to directions.
5. Serve sausage, peppers, and sauce on rolls with veggies as the side.

Harris Teeter Recipe of the Week 2/28

Sharon at Mom on Dealz creates a recipe each week from the items on sale at Harris Teeter.  This week is no exception!

Here is the recipe for Crockpot Chicken with Asparagus:

Crockpot BBQ Chicken with Asparagus and Rice

Ingredients:
-Harris Teeter Whole Fryer Chicken-$0.59 lb-I got one for $3.09
-Harris Teeter Asparagus $1.79
-Kraft BBQ Sauce $1
-Uncle Ben’s Ready Rice 3/$5-$1 coupon from 2/20 RP=$0.67
-2 tablespoons butter or margarine (assume on hand)
-Garlic powder or chopped garlic (whichever you have on hand)
Final cost of meal=$6.55

Directions:
1. Clean chicken and place in crockpot legs up.
2. Pour entire bottle of BBQ over chicken and cook on low 8-10 hours.
3. Cook rice according to directions and set aside.
4. Melt butter in sauce pan and add garlic and asparagus. Cook to your desired tenderness.
5. Serve asparagus over rice alongside chicken.
