Carrot Cake in a Jar

5 simple ingredients make this carrot cake quick and easy to prepare. Baking it in a little mason  jar is an extra pretty way to serve it up to guests for an easy dessert. Individual jar desserts are popular right now, besides being cute they make for a great portion size.  Batter can be made ahead of time, portioned into jars, and baked when you are ready to eat. The cake is sweet and moist with a slightly crunchy top, delicious on its own or topped with a spoon of cream cheese.

Ingredients:

¾ cup brown sugar

¼ cup and 1 Tbsp. coconut  or vegetable oil

¾ cup flour

¾  cup carrots, shredded

2 eggs

 Directions:

Preheat oven to 350 degrees.

Combine brown sugar, oil, flour and eggs until well mixed.

Fold in shredded carrots.

Oil sides and bottom of 4 small 4 oz. mason jars well.

Fill to 1/4 ”  from top with batter.

Bake for 20-22 minutes until top is golden brown and a toothpick inserted into center comes out clean.

Serve warm with a dollop of ice cream, cool whip or cream cheese frosting.

Orange Garlic Chicken

Forget calling for takeout or delivery when it is nearly as easy (not to mention less expensive and healthier too) to make your own.  Using just 5 common ingredients that are probably already in your pantry and fridge you can serve a delicious homemade healthy chicken stir fry recipe.  This dish is easy to adjust to serve more or less people,  or to go lighter or heavier with flavoring.  Sesame oil will give you a slightly more authentic Asian taste but you can use vegetable or canola oil to fry in as well. Chicken stir fry is a quick, healthy meal that will make everyone happy and requires minimal fuss on your part.

Ingredients:

1 bag frozen stir fry peppers and onions

3 boneless, skinless chicken breasts

1/4 cup soy sauce

1/2 cup fresh orange juice

3 cloves fresh garlic

salt and pepper to taste

oil for pan

Directions:

Partially frozen chicken breasts are the easiest to cut- season chicken with salt and pepper then slice into 1/4″ strips.

Drizzle oil in pan- enough to moisten bottom of pan, and heat pan to medium high heat.

Sautee chicken strips until mostly cooked throughout.

Add vegetables and garlic, cook until vegetables are tender-about 5-7 minutes.

Stir in orange juice and soy sauce, turning to coat, cook and additional 2 minutes.

Lemon Sugar Cookie Recipe

Sometimes you want a treat that isn’t super heavy or that will make your spin head with sugar!   This Lemon Sugar Cookie Recipe fits the bill, just 5 simple ingredients, 1 bowl, and less than 20 minutes- you end up with a cookie that is light, crisp, and perfectly flavored.   Lightly sweetened with a lemony tang they are perfect for summer. Using fresh lemon instead of artificial lemon flavoring really makes these special and a little more “gourmet”.

Ingredients:

1 whole lemon

1 1/2 cups flour

1 cup sugar

2 eggs

1 tsp. baking powder

Directions:

Begin by preparing your lemon as we are going to use two parts- zest and juice.

Preheat oven to 325 degrees

Juice your lemon, you will need 2 tsps. lemon juice.

Zest 2 tsps. lemon using a special zesting tool or the smallest holes on a hand grater. Zest gently you only want the yellow zest, not the white- it is bitter.

 In a large bowl with a hand or stand mixer whip eggs until frothy.

Add sugar and beat until smooth.

Mix in flour, baking powder, lemon zest and juice until just blended.

Drop by heaping spoonful’s on to a baking sheet lined with  foil or nonstick spray.

Bake for 9-11 minutes, remove just before they brown.

Store in an airtight container, if you like your cookies a little softer store with a piece of bread, your cookies will absorb the moisture from it and soften up.

Fresh vegetables make a great accompaniment to summer dishes and are plentiful this time of year. Fresh spinach sautéed with bacon and fresh mushrooms makes an excellent side for any meal. Spinach picked up at the grocery store or fresh spinach picked from your garden create the base for this warm and tasty salad.  This Warm Spinach Salad With Bacon and Mushroom can make an incredible accent with a nice steak or seafood.

Ingredients:

4 cups fresh spinach

1- 1/2 cups sliced mushrooms

2 pieces of bacon

1-2 cloves crushed garlic

salt and pepper to taste

Directions:

Dice bacon into small pieces.

Place bacon in a large nonstick pan and sauté until cooked through but not crisp.

Easy Tropical Fruit Parfait (With Coconut Whipped Cream)

Indulge in some delicious flavors and  have dessert even if you are trying to eat healthy! This sweet and light dessert is a perfect way to cap off a meal or you can have it for a midday snack to curb unhealthier cravings.

Fresh tropical fruits layered with flaked coconut and delicious homemade coconut milk whipped cream are a great way to satisfy a sweet tooth without feeding the hips. It may seem intimidating but homemade whipped cream is really very simple to do. The most important thing to remember is to use cold ingredients, as well as utensils.

Hint from the chef: If you want to sweeten your coconut whipped cream, its a bit bland- add a bit of your favorite sweetener after whipping and a dash of vanilla.

Ingredients:

1 Mango

2 Kiwis

2 Mandarin oranges or tangerines

¼ cup Unsweetened Flake Coconut

1-13.66 oz. Can Coconut Milk

Directions:

Place coconut milk in refrigerator several hours in advance.

Peel Mango, Kiwi, and oranges or tangerines.

Pull apart orange sections.

Toss fruit and coconut flakes together.

Layer fruit mixture, and whipped cream together in a bowl or glass.

Top with an additional dollop of whipped cream.

For Whipped Cream:

Place metal bowl and beaters or whisk in refrigerator for 15 minutes before you are ready to make whipped cream.

Open can ¾ of the way with opener, keeping lid from opening, drain out coconut water. You will find most of the cans contents have solidified in the cold.

Continue opening can and place solid coconut milk into cold metal bowl.

Whip coconut milk using a hand or st and mixer until fluffy.

If desired add sweetener and vanilla for flavor- whip an additional 45 seconds to incorporate.

Stir Fry is a great choice for a quick and easy meal.  If you choose veggies that can also give you a great break on your grocery bill (meatless is often cheaper).

One of the best  things about a stir fry is that you can use whatever you have on hand and change your oil or sauce to create a completely different flavor.

2 Tbsp. cornstarch

1/2 cup water

Sesame or Canola oil to coat pan

Directions:

Heat oil over medium high heat on stove top.

Toss in vegetables and sauté about 5-6 minutes

Flourless Chocolate Cake Recipe Easy

This Flourless Chocolate Cake Recipe is decadent and rich without being overly sweet, made with bittersweet chocolate it provides  just the right amount of sweetness.  While it looks difficult to make it is really simple with a hand or stand mixer. The cake remains moist even after a long cooking time, almost like a molten cake, with slightly crisp edges. Ideal for those looking for gluten free deserts but delicious for anyone, I think the texture without  the flour is much better than a recipe with.

Ingredients:

6 eggs, separated

6 Tbsp. butter

10 oz. bag bittersweet chocolate chips

1/2 cup granulated sugar

1 tsp. Almond extract

Directions:

Preheat oven to 275 degrees.

Butter a 9 inch springform pan, on bottom and sides.

Combine chocolate chips and butter in microwave safe dish, cook in 30 second increments, stirring each time until chocolate is melted thoroughly.

Whisk in egg yolks until well blended.

Using a hand or stand mixer, whip eggs until soft peaks form-mixture will be slightly  thickened and fluffy.

Gradually add in sugar and mix until stiff peaks are formed.  They are ready when you lift the mixer and  eggs mixture maintains its shape on the whisk.

Fold in ( this is done by using the spatula to fold mixture over onto itself gently) chocolate mixture a little at a time until all of it has been incorporated.

Spoon into prepared pan, smoothing top with spatula.

Bake for 40-45 minutes until edges of cake pull away from sides of pan.

Sprinkle top with powdered sugar if desired to dress it up.

This semi-homemade recipe combines the best of 2 desserts- Cookie Dough and Brownies.  A double layered bar of delicious that will be gobbled up in a flash.

Double the recipe and bring a big pan of these Cookie Dough Brownies to the next family barbeque to make a splash. You can make your own brownie mix from scratch or use your favorite box mix.

The one rule while eating these is DO NOT think about the calorie count, otherwise you wont enjoy them and then really, what’s the point?

 Ingredients:

1 box brownie mix

(additional ingredients for mix-water, oil, and egg)

1 cup butter ( 2 sticks) softened

1 cup granulated sugar

1 cup brown sugar

1 1/2 cups semi sweet chocolate chips

2 tsp. vanilla extract

1/4 cup milk

Directions:

Butter an 11 x 17 cake pan, set aside.  You can always try this Baker’s Edge Nonstick Edge Brownie Pan if you like the edges.

Mix and bake a packaged brownie mix according to directions or make your own.

Remove from oven allow to cool completely.

Cream butter, brown, and granulated sugar until well mixed.
Mix in vanilla and milk.

1 medium onion

1 10 1/2  oz. can of beef gravy

This Healthy Beef Stir Fry makes for a quick meal, perfect for the end to a busy work day. This recipe is better than take out with far fewer unpronounceable additives, preservative, and who knows what else. Just  5 ingredients work together to create a dish that is light in fat but heavy in flavor.

To keep it healthy use lean cuts of beef-top or bottom round, sirloin, tenderloin, etc.  Using a nonstick pan will mean you use less oil, cutting back on even more fat. Serve over brown rice for an even healthier dinner with added fiber.

1 lb. beef strips, lean cut

1 head of broccoli or add as many veggies and you like!

Directions:

Whisk beef broth, soy sauce, and cornstarch together in a small bowl.

Wash broccoli and chop into small florets.

Drizzle just enough oil to coat pan.

Heat oil over high heat.

Add broccoli and sauté for 2-3 minutes.

Stir in beef and soy sauce mixture.

Continue to cook for an additional 7- 8 minutes until beef is thoroughly cooked, broccoli softened, and most liquid has been absorbed.

Serve over rice or noodles.

  • 1 lb. beef strips, lean cut
  • 1 head of broccoli or add as many veggies and you like!
  • 2 Tbsp. low sodium soy sauce
  • 2 Tbsp. cornstarch
  • 1 cup low sodium beef broth
